  Beef Mask, popularly known as (kpomo, ponmo or kanda) is the skin and remnants of meat from a cows head. It has a firm, chewy, and gelatinous texture. It is relatively mild on its own but exceptional at absorbing rich spices and seasonings. It is a slow or pressure cooked meat variety to allow spices to penetrate its gelatinous structure. It finds itself in a wide variety of soups, stews or dry spiced in finger foods.
