Trainee / Apprentice Butcher We are a Butcher based in Inverurie – and we sell meat, lots of meat – beef, pork and lamb with burgers, sausage rolls and sausages and lots more in the mix.
We are slightly different than your normal butcher as we do things on a much bigger scale. We prepare and sell direct to customers – sending out about 4,000 frozen orders per week to customers across the UK – all delivered right to their door. We also supply luxury hotels and restaurants overseas to the likes of Sweden, Denmark and Hong Kong to name but a few!
About the role: Learning the skilled trade of a Butcher is more than just cutting meat, it’s understanding all the different cuts, knowing your fillet from your sirloin, your flank from your neck, your rib trim from your shoulder.
It’s about understanding traceability (from the farm to the fork) and all the hygiene and specification standards that are involved in food production. It’s about learning to cut a 180g fillet steak right on the weight, or bone out and create a lamb crown fit for a King (quite literally as we are a Royal Warrant Holder and supply Buckingham Palace and the Royal Family!).
All this takes focus, determination and a love of good food. It’s not easy, you’ll be working in a noisy, chilled environment, using knives most days. The shifts start early at 6 am in the morning working Monday – Friday – but you finish at 2.00 pm so you have the rest of the afternoon and evening to make the most of.
Importantly, you’ll be working with a great team of experienced people who are passionate about what they do, want to share their knowledge, and who will be there to support, mentor and develop your skills in the butchery role, as well as team working and communication skills.
Training: As part of the Apprentice Scheme, you’ll study and gain formal butchery qualifications and be independently assessed as you progress through your training.
About you: We will teach you everything you need to know about butchery so previous experience isn’t required. We would however ask that you are;
• A quick learner, able to commit to a structured apprenticeship programme.
• Reliable, with good time keeping skills.
• Able to understand and adhere to food safety standards.
• Have good reading and writing skills.
• Motivated to produce excellent work, both individually and as part of a team.
