We are looking for a Production Assistant Manager to support the Boning Hall Manager in driving consistent operational excellence of the Boning Hall as measured by core metrics of yields, quality, safety and people management. Responsible for all Boning Hall employees, ensuring consistency and compliance to boning, butchering, trimming and finishing requirements for red meat for sale and consumption, in accordance with client specifications and Company SOP’s.

Key Responsibilities 

  • Responsible for the management of the department activities and resources to produce safe, quality products to agreed quantities and deadlines in a clean and hygienic environment.
  • Demonstrate and manage compliance to Company’s PPE requirements, knife safety requirements, hygiene and quality standards, department SOP’s and customer specifications
  • Maintain extensive understanding and knowledge of customer specifications, yields and margins and department processes
  • Manage roll out of specification/task changes and/or new customer requirements to all Boning Hall Supervisors, ensuring full understanding and compliance
  • Manage and allocate department resources accordingly to ensure required staffing levels to meet daily production targets and forecasts
  • Monitor and review boning, butchering, trimming, and finishing tasks
  • Identify and proactively manage production issues, engaging and collaborating with relevant departments to mitigate risk
  • Extensive knowledge and understanding of daily, weekly, and forecasted production plans, working with Supervisors to set up lines, completing relevant checks and ensuring resource and materials readiness
  • Manage all prestart, hygiene and safety checks as required, identifying, and resolving any issues before production starts
  • Understanding and ensuring quality specifications and maximum yield values of various cuts and products
  • Management and minimising of waste, reporting any waste appropriately
  • Managing, identifying and/or reporting any accidents or near misses, undertaking/supporting investigations as instructed/necessary
  • Managing all breakages, damages, or defaults of equipment, liaising with Maintenance as required, only permitting use of equipment when safe to do so
  • Support Internal and External audits as required, managing, and implementing any corrective and preventative actions
  • Driving continual improvement of production processes; writing procedures, making production more efficient, utilising data to make informed suggestions and decisions
  • Continual review, improvement and reporting on department throughput, yields, efficiencies, costs etc
  • Promote and encourage staff to deliver a quality product on a consistent basis by leading by example
  • Management for annual leave, absence, disciplinary and grievance processes
  • Promoting and demonstrating an engaging and positive culture
  • Evaluate and manage staff in accordance with Group Policies, in particular the Hygiene, Food Safety, Health and Safety and HR policies
  • Identifying and effectively addressing performance issues, with support from HR as appropriate
  • Monitoring and identifying team training requirements, providing coaching, mentoring, or delegating further training as required
  • Actively participate in, and promote, all required company training
  • Identify and develop talent and high performers, including succession planning
  • Any other duties as instructed by management and within the competency of the post holder

Requirements

  • Significant knowledge and experience of meat production (preferably red meat), processing, and operations essential
  • Animal Welfare, HACCP, NEBOSH or IOSH qualification desirable
  • Proven ability to lead, motivate and develop people and teams to achieve established goals and improve department performance
  • Commercial awareness and cost management skills essential
  • Strong analytical and problem-solving skills
  • Good interpersonal, communication, and negotiating skills
  • Capable of sound judgement and making production decisions quickly and whilst under pressure
  • Commitment to good practice and leading by example
  • Communicates well in written and oral form with multi-nationals on all levels
  • Ability to multitask and work under own initiative to deliver to deadlines
  • Relationship builder with influencing skills
  • Excellent IT skills (particularly Excel)
  • Strong team player
