Oxtail is the tail of a cow, with the skin removed. It can be found in several versatile dishes from the humble pepper-soup to slow-cooked stews, soups assorted meat curry dishes. It is a favourite winter time highly spiced chews within the Afro-Caribbean community. A cow has only one tail, so it can quickly become a scarce and highly sought after product of high cost. This bony tail is surrounded by a cut of meat rich in gelatinous material that gives it a strong clean succulent flavour that responds beautifully to the minimum addition of spices, especially when slow cooked to breakdown the collagen and to ensure the meat falls off the bone at the slightest pull.
