Tripe is the general name given to the four edible linings of the stomach of ruminant animals of cattle such as cow, goat, lamb and mutton. The edible parts are the rumen (tripe), reticulum (honeycomb tripe), omasum and abomasum . Beef Tripe is renowned for its digestive enzymes properties, perfect calcium to phosphorus ratio and its high selenium, zinc and vitamin B12 content. Tripe is generally used a great addition to several meat portions of a recipe in the Afro-Caribbean and Southeast Asian cuisines from the assorted meats of pepper-soups to those of traditional swallow stews. It has a particularly mild flavour and chewy texture and it responds well to spices and slow-cooking recipes.
