Tripe is the lining of cattle stomach made up of four distinct chambers. The first two chambers are the main ones. The first, much larger chamber is called the rumen or simply tripe. The reticulum is the second chamber in the four-chamber alimentary canal of a cattle such as cow, goat, sheep, lamb and mutton. It is also known as the honeycomb due to its honeycomb-like structure. It is shaped like a crown and is the smaller portion of the tripe structure compared to the rumen. The remaining two chambers are called the omasum and the abomasum. These are also edible. Like other offals, tripe is a low-carbohydrate meat. The honeycomb like structure of the reticulum, traps cooking sauces making it taste much better and coupled with a much tender and less chewy meat compared to the rumen, this makes it the more expensive of the two main tripe types. Tripe has a lower protein, fat and mineral content compared to other offals such as lungs, heart and kidney. Honeycomb Tripe is a highly sought after part of the cattle and used in many varieties of dishes in many cultures around the world. It can also be found as part of the assorted meats recipes in these cuisines.
